1 Can White Beans (Butter beans, cannellini beans)
5 TB Extra Virgin Olive Oil
1 TB lemon juice (about 1/2 lemon)
Sea Salt
Pepper
Thyme, Rosemary, or other spices
Directions
Rinse beans under running water and drain well
In a food processor combine beans, oil, lemon juice, small amount of spice of choice, a few shakes of salt and pepper and process until smooth, about 3 minutes. Scrape down the sides of the bowl, as needed
If the dip seems too thick in the food processor, add more oil or water 1 TB at a time. Process until the dip has the texture you like. Depending on the beans you use, the texture will vary.
Taste and adjust seasoning to your taste. Salt, pepper and spices can be added in any amount you like. Run food processor to mix in added seasonings
Transfer Dip to shallow serving dish and spread into an even layer
Optional-drizzle liberally with olive oil and sprinkle with parsley
