Corn Bread (Gluten Free)


Prep Notes

Use Organic Products whenever possible

Ingredients

1 3/4 Cup Corn Meal

4 1/4 tsps. Baking Powder (Gluten Free)

1/4 tsp sea salt

1 Cup Buttermilk

(if you do not have any add 1 TB White vinegar to slightly under 1 Cup milk, stir, and let it rest for 15 minutes)

1 Egg, beaten

2/3 Cup Melted Butter or Oil

1 Cup Frozen Corn Kernels (optional)

Directions

  1. Preheat Oven to 400 degrees
  2. Grease 8 x 8 baking pan
  3. Put all dry ingredients in a bowl(corn meal, baking powder, salt)
  4. Put beaten egg and buttermilk in a mixing bowl and mix
  5. Add melted butter/oil and mix in
  6. Add dry ingredients and only mix until all the dry ingredients are fully mixed. Do not over mix
  7. Pour into prepared baking pan
  8. Bake 15 minutes or until a toothpick comes out clean when inserted Do Not overbake

This is lovely served warm!

Can be stored in an airtight bag for 2 days.
